Our coffee shop in Henderson serves as the heart of our operation, where we not only brew and serve exceptional coffee, but also roast our beans on-site and produce our cold brew coffee. For the best flavor, we recommend letting your coffee degas for about 14 days after roasting before brewing. While it might seem like fresher coffee is always better, allowing it to rest helps release carbon dioxide trapped during the roasting process. This step ensures a more flavorful cup when brewed. By letting your beans degas, you’ll get a more evenly brewed coffee with richer aromas, making it the perfect way to enjoy your coffee in Henderson or Las Vegas.

Dark Moon is an omni roaster. Meaning all of our coffee can be brewed in any brewing device. We do not roast a specific way for a specific method as we believe coffee should be able to be brewed however you like. With that being said, all of our coffee could be brewing as espresso, pourover, cold brew, french press, drip coffee etc.
We source our coffee very carefully, we have many different coffee importing partners that we work with to help us supply unique & flavorful coffee that we want to showcase. This process includes sample roasting many coffee samples at a time from many different coffee farms to make a purchasing decision.
We roast our coffee in a nordic style approach with the coffee resulting in the light to medium spectrum. Some of the coffee that we do offer does look darker than normal, that is due to different growing elevations, different processing methods & many other factors.
Right in our coffee bag. Our bags are resealable using a zip method, no need to fold the bag, use zip ties or put into a different container. The coffee will remain the freshness by staying in the bag & only opening when you intend to brew the coffee!

Yes, we currently have one decaf coffee option from Colombia.
Specialty coffee is a high-quality coffee that is graded and rated based on its flavor profile and the skill of the roaster. Organic coffee is grown using methods that do not involve synthetic fertilizers or pesticides, and must meet certain certification standards. Both specialty and organic coffee are considered premium options, but obtaining organic certification can be more expensive for farmers and roasters, making it a “pay to play” program.
We are not currently an organic certified facility as it is an extensive process to understake but we do abide by many of the contingencies that are in the program. Many of the coffees that we buy are organic certified but we are not able legally state that on the label as we are not an organic certified facility. At some point we may revisit getting our facility certified organic.
Everyday of the week. We do our very best to ship our coffee as it is roasted or within 5 days off roast. Sometimes orders will take a couple days to ship as we roast different coffee on different days. We will ensure that by the time the coffee gets delivered to you it will still be able to be degassed a proper amount of time before brewing! Reach out to [email protected] if you have any questions!
